In honor of Valentine's Day on Wednesday, I cooked favorite foods of the big and little one. The litte one basically eats plain pasta or rice, fruit and possibly a few bites of very plain meat. We got her to try some poached salmon a few weeks ago, only to discover that she is also allergic to salmon.
The big one likes almost any Asian food. She would eat lo mein three times a week if she could and her favorite flavor is "soy sauce". But this recipe also gets high marks, and an actual "thank you momma, that was a good supper".
Noodles with Spicy Peanut Dressing from A Spoonful of Ginger,
Cook whole wheat vermicelli noodles until al dente. Drain and set aside
In large saute pan with a small amount of olive oil, begin to saute a mix of finely chopped vegetables. Note: bagged, pre-julienned broccoli salad mix, looks virtually the same when mixed into this dish, heehee. I also usually use some red peppers, mushrooms or finely chopped cabbage, which do get picked out. Once the vegetables are beginning to soften, add the pasta back to the pan. Pour in the spicy peanut dressing (below) and continue to stir until well combined and heated through. Garnish with chopped green onions and finely chopped peanuts.
Spicy Peanut Dressing:
2 T minced fresh ginger
1/2 T minced garlic, fresh is way better than prechopped, bottled
1 teas. hot chili paste
1 C smooth peanut butter
1/2 C soy sauce
3 1/2 T sugar
3 1/2 T worchestershire sauce
3 T toasted sesame oil
1/2 C chicken broth
Mix all ingredients in small bowl. Stir until well blended. It usually still looks a little lumpy, but once it is combined with the pasta and heated, it will work well.
